Origin: Ethiopia - Sidamo Flavor Notes: Semi-Sweet, Fruit aromatics, and Chocolaty/Nutty Undertones Processing Method: Mountain Water Process, Natural
From Burman Coffee Traders: DESCRIPTION A wonderful fresh run of Decaf Ethiopian. Sweet, clean, and chocolaty with hints of a red fruit tone.
During the water process, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The hydrated green coffee is then introduced to a unique solution of concentrated coffee solubles that draw out the caffeine while minimizing the loss of flavor compounds. Once the caffeine has been removed the green coffee is re-dried and re-bagged for transport, and the extract solution is filtered of its caffeine and recycled to be used again.
Tasting Notes: A good cup from light to dark. Lighter you will see a little more fruitiness, with just hints of a chocolate factor. Pretty low acidity across the board with a medium body. Medium roasts build the chocolaty part of the cup, smooth and sweet. Just a hint of a red fruit in the aromatics and as the cup cools. Darker roasts get a little roasty muting the delicate features of the cup but the roasty and smoky tones do compliment the more chocolaty properties of the cup.
